We received an outpouring of entries in the Greens, Beans and Veg-All categories, but in the end, we had to crown the winners!

Praline Yams
Ingredients: praline yams

2 15 oz cans of Princella Cut Yams, drained
2 Tbsp. Flour
2 Tbsp. Margarine or butter, melted
1/4 cup Pecans, chopped
1/4 cup Coconut
1/4 cup Brown sugar, packed

Directions:

Heat oven to 350°F. Place drained yams in an ungreased 1 1/2 quart casserole or baking dish. In a small bowl, combine remaining ingredients; blend well. Dollop over yams. Bake at 350°F for 15 to 20 minutes or until bubbly.

Makes 6 servings.

 
Quick and Easy Candied Yams
Ingredients:

2 15.5 oz. cans or 1 29 oz. can Princella or Sugary Sam Cut Sweet Potatoes or Royal Prince or Trappey’s Whole Sweet Potatoes
5 Tbsp. Butter or Margarine
1/3 cup Brown sugar
1/3 cup Pecans, chopped
1 or 2 cups Miniature marshmallows (optional)*

Directions:

Microwave Directions:
Pour sweet potatoes and liquid into 2-quart. microwave-safe dish. Cook in microwave on high until heated through, stirring twice. Drain liquid. Combine butter or margarine and brown sugar in 1-quart. microwave-safe dish. Cook in microwave on high until hot but not boiling, stirring twice. Add nuts to sauce, if desired, and pour over hot sweet potatoes. Stir just to coat. Serve immediately.

*One or two cups miniature marshmallows may be added on top of dish just before serving and placed under the oven broiler until golden brown. Watch closely.

 
Yam Pie
Ingredients:

1 15 oz. can Princella or Sugary Sam Cut Yams, drained and mashed, or Princella or Sugary Sam Mashed Yams
1 cup Light brown sugar
1/2 tsp. Salt
1/8 tsp. Allspice
1/4 tsp. Ginger
1 tsp. Cinnamon
1/2 cup Molasses
2 Tbsp. Corn starch
3 Eggs, slightly beaten
1 cup Evaporated milk (undiluted)
1 9-inch Pie shell, unbaked

Directions:

Combine yams, sugar, salt, spices, molasses and corn starch; mix. Add eggs and milk; mix thoroughly. Pour mixture into pie shell. Bake in moderate oven 400°F for 15 minutes. Lower to 350°F. Bake 20-30 minutes or until knife inserted in center comes out clean.
